Air France introduces new menus in its La Première and long-haul Business cabins available from November 2023 through February 2024.

On flights departing from Paris, renowned Michelin-starred chefs Emmanuel Renaut and Anne-Sophie Pic will offer exceptional dishes to Air France customers. The talented Meilleurs Ouvriers de France pastry chefs Angelo Musa and Philippe Urraca will also contribute their expertise.

For flights departing from international stations, Air France has partnered with chef Jean-Charles Brédas. He will curate the entire menu for the Business cabin on flights from Pointe à Pitre, Fort de France, Saint Martin, Cayenne, and on flights within the Caribbean. This collaboration with Jean-Charles Brédas marks the 18th chef to work with Air France.

In creating these menus, the chefs utilize fresh, locally sourced ingredients provided by Servair, the leading in-flight catering company. Air France is committed to responsible sourcing. The airline ensures that the meat, poultry, dairy products, and eggs are of French origin. The fish comes from sustainable fisheries for flights departing from Paris. Additionally, vegetarian menus are available in all travel cabins on all Air France flights.

Air France‘s La Première cabin offers customers a delightful dining experience that rivals even the finest restaurants. The airline has collaborated with acclaimed chef Emmanuel Renaut to create a new menu. Renowned for his expertise in Savoyard cuisine and holding three Michelin stars, Chef Emmanuel Renaut combines local ingredients with traditional French culinary techniques.

The upcoming months will feature a selection of eight delectable dishes. They include a savory farmhouse chicken confit with mushrooms and a delightful vegetable mille-feuille. Another highlight is a creamy medley of root vegetables, button mushrooms, porcini mushrooms, and the famous Beaufort cheese, beloved in Savoyard cuisine.

“Nature is a source of inspiration that is as infinite as it is fragile. My cuisine tells a story, one of simplicity, indulgence, and comfort. This is what I wanted to pass on to Air France passengers,” said Emmanuel Renaut. 

Angelo Musa, renowned for his exceptional dessert-making skills, will delight passengers with his delectable creations onboard. Prepare your taste buds for four heavenly desserts that will soon grace the menu. One of the highlights is the mango, citrus, and cognac baba, offering an irresistible blend of fruity flavors. Another treat to savor is the chocomûre, a divine combination of rich Venezuelan dark chocolate and the tanginess of wild blackberry. Get ready to indulge in these heavenly delights during your flight.

Anne-Sophie Pic, the renowned triple Michelin-starred chef, has curated a delectable selection of dishes exclusively for Air France’s long-haul Business cabin. This season, she presents eight tantalizing menus for passengers to savor on board. Experience the harmonious blend of Japanese ingredients and locally sourced French produce in her exquisite chicken supreme with sake. Or indulge in the delightful flavors of roast parsnip, a resurgent vegetable enhanced with dill butter, curry, and walnuts. These culinary creations promise to elevate your in-flight dining experience to new heights.

“For Air France customers, I’ve created some unique dishes highlighting French produce. I’ve worked on them by playing on the combination of original flavors and the strength of the tastes”, said Anne-Sophie Pic. 

Air France has partnered with the esteemed pastry chef Philippe Urraca to offer delectable desserts in the Business cabin. Indulge in mouthwatering treats like the Opera, Black Forest, and Yuzu Entremets. Enjoy your elevated culinary experience in the sky.

Air France has introduced new dishes by Chef Jean-Charles Brédas on select flights. These flights depart from the French West Indies (Pointe à Pitre, Fort de France, Saint Martin) and French Guiana (Cayenne) to Paris. The menu is also available on certain regional Caribbean flights. Chef Brédas has created twelve delicious dishes available onboard in the upcoming months. Some highlights include a creamy risotto with coconut milk, pigeon peas, almonds, and giraumon. There is also a roasted grouper fillet served with crunchy papaya sauerkraut, green sauce, and dachine cubes. The chef has used local and seasonal ingredients in each dish, aligning with Air France’s commitment to quality.

“My cuisine is carefully thought out. I’ve created simple recipes using local produce that reflect my Creole and mixed-race identity, a cuisine that combines the pleasures of taste and sight: where the land meets the sea,” says Brédas.
