Cathay Pacific’s Delicious New ‘Hong Kong Flavors’ In-Flight Menu

Cathay Pacific has enhanced its collaboration with Duddell’s, a Michelin-starred restaurant in Hong Kong, by introducing a new selection of “Hong Kong Flavours” to its in-flight menu. This latest addition follows the initial successful launch of their partnership in February 2023.

The new menu features Cantonese and regional Chinese dishes alongside refined classics. It is available to First and Business class passengers on selected long-haul flights from Hong Kong. This initiative is part of Cathay Pacific’s commitment to offering high-quality dining experiences. It reflects the airline’s ongoing efforts to collaborate with renowned local restaurants and brands.

A First-Class Culinary Journey on Cathay

First-class passengers can savor a culinary journey. It begins with an appetizer of crystal pork terrine with black vinegar, a delicacy from Zhenjiang, China. The dish consists of cured and boiled pork knuckles, thinly sliced and served with a sweet and tangy aged black vinegar sauce.

The main course options include sautéed abalone and chicken with Sichuan pepper, a modern spin on a traditional Chiu Chow dish. This features abalone and chicken sautéed with Sichuan peppercorns. It is served with steamed winter melon rolls and salted fish and vegetable rice. Alternatively, the steamed cod fillets with Chinese ham and shiitake mushrooms offer a rich blend of flavors and textures.

Dessert is a black sesame tart with tofu ice cream, drawing inspiration from the classic black sesame soup. It combines a black sesame mousse in pastry with the unique addition of tofu ice cream. The balance of nutty and creamy tastes is a comforting end to the meal.

Business Class Delights Onboard

Business class customers are offered a luxurious dining experience with the Sichuan dish “saliva chicken.” This poached chicken is accompanied by a spicy sesame and chili sauce, combining spicy and fresh tastes.

The main dishes include braised pork ribs with a hawthorn sauce and green apples, fried pork ribs in a sweet and tangy sauce, and braised beef ribs with port wine. This slow-cooked dish has a tender texture. Celery and carrots on the side offer a balanced flavor.

Tofu pudding with red beans is a delightful dessert. This silky smooth soybean-based pudding is topped with sweet azuki red beans from Hokkaido. The result is a light and richly aromatic finish to any meal.
