Cathay Pacific Adds New Luscious French Cuisine Menu Options

Cathay Pacific and Louise bring elevated French classics to the skies.

Cathay Pacific partnered with JIA Group’s Michelin-starred French restaurant Louise to elevate in-flight dining. The airline’s new menu introduces passengers to Louise’s unique approach to classic French dishes.

The airline is improving the variety and quality of its inflight dining options. Cathay Pacific works with partners equally committed to offering high-quality food and beverages. With careful attention to detail and various choices, they satisfy customers’ tastes and requirements.

Cathay Pacific‘s partner, Louise, developed a special menu for the airline consisting of 16 classic French dishes with a twist. This exclusive menu is available to First and Business class passengers on long-haul flights from Hong Kong. This follows the airline’s successful introduction of “Hong Kong Flavors” in collaboration with JIA Group’s Duddell’s.

Vivian Lo, the General Manager of Customer Experience and Design at Cathay Pacific, expressed satisfaction with the collaboration with JIA, citing a previous successful partnership with Duddell’s. They are enthusiastic about working with Louise to develop a custom menu featuring French classics with a unique twist, reflecting Cathay Pacific’s and Louise’s creativity and skill.

Through the exchange of ideas and expertise with the Louise team, we hope to inspire and challenge ourselves to continue to innovate and improve our food and beverage offerings. Louise Cooks Up Cathay’s French Cuisine In-flight Meal

Louise has captivated local food lovers, and we are now embarking on an exciting journey to present our traditional French delicacies, reimagined, to passengers worldwide, together with the Cathay team. First class

First-class customers will enjoy an appetizer of Obsiblue prawns in an herb-infused consommé. These prawns, prized for their sweet taste and unique blue hue, are served in a meticulously crafted broth from various vegetables. The combination offers a rich and nuanced flavor profile.

Cathay customers can choose from refined main dishes, including the steamed Chilean sea bass with chorizo sauce. This dish features sea bass from the Southern Ocean’s icy depths, served perfectly steamed to accentuate its succulent texture and pure taste. It’s garnished with chorizo slices and a Basque-style piperade made of peppers, tomatoes, and onions.

The chicken ballotine with sauce supreme is a tribute to Louise’s well-known roasted chicken. It uses the breast of the bird, rolled and cooked till tender, then cut into medallions. This dish is accompanied by a luxurious sauce created from velouté (a mixture of chicken stock and roux) enriched with heavy cream and a touch of Cognac.

For dessert, Cathay offers customers a raspberry and pistachio financier. This moist and delicate cake features a flavorful combination of pistachios, raspberry chocolate, raspberry cream, and fresh raspberries, appealing to the eyes and tastebuds.

Business class

Business passengers can enjoy a delicious main course of braised Iberico pork belly with bacon jam. The pork is brined and tenderly braised to enhance its flavor. It is served with a sweet and smoky bacon jam, creamy confit potatoes, and red endive leaves for a balanced taste experience.

Alternatively, Cathay customers can enjoy pan-seared beef tenderloin paired with Madeira jus and porcini purée. This dish is reminiscent of Beef Rossini. The tender beef is served with confit onions, button mushrooms, and potatoes, enhanced by the creamy, earthy taste of porcini mushroom purée.

Savor a rich dessert called Guanaja chocolate cremeux to wrap up the meal. It is a layered dessert with three chocolate elements: a smooth cremeux made with bittersweet Guanaja dark chocolate, pieces of intense dark chocolate, and crumbled chocolate brownies providing a fudgy, chewy texture.
